  • 2 tablespoons pecans
  • 1 cup fresh basil leaves
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves
  • Salt to taste

    Put pecans, olive oil, garlic, and basil into a food processor. Puree the mixture until it becomes smooth. Add salt, move the mixture to a bowl, and let it chill. Slowly combine with parmesan cheese.

    Boil salted water, add shrimp, and cook the shrimp 8 to 10 minutes. Drain, peel, and refrigerate the shrimp until it is chilled. Arrange the shrimp on a plate and put pesto on top.
