Ingredients

  • 4 oz.(112g.) orecchiette pasta
  • 1 can (14.5 oz. or 400g.) beef broth
  • 1 carrot, sliced
  • 1 can (14.5 oz. or 400g.) whole peeled tomatoes, chopped
  • 2 garlic cloves, crushed
  • 1/2 tablespoon cilantro, chopped
  • 1 can (15.5 oz. or 439g.) pinto beans
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

    Combine carrots, pinto beans, garlic, tomatoes with juice, basil and beef broth in a large pot.

    Bring the mixture to a boil and simmer covered for 40 minutes.

    Add pasta to the mixture, and cook uncovered for 10 minutes until the pasta is tender. Once the pasta is tender, add in chopped cilantro.
