Ingredients

  • 1 pound (454g.) orecchiette pasta
  • 10 oz.(280g.) boneless, skinless chicken breast, chopped
  • 2 oz.(56g.) parmesan cheese, grated
  • 2 tablespoons extra virgin olive oil
  • 8 oz.(227g.) sour cream
  • 1 large onion, chopped
  • 3 tablespoons dry white wine
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

    Cook pasta in lightly salted boiling water for 8-10 minutes or until al dente. Drain.

    Cook onion in a saucepan with 2 teaspoons of olive oil over medium-low heat for 3 to 4 minutes until the onion is tender.

    Add chicken to the saucepan and continue cooking for 6 to 8 minutes. Add white wine to the mix, and simmer for 4 minutes before adding sour cream. Simmer the mixture for 5 minutes.

    Place the cooked pasta into a large bowl. Cover the pasta with chicken. Sprinkle the top with cheese, and season with salt.
