  • 8 oz.(227g.) Italian sausage, removed from casings
  • 4 oz.(112g.) tomato paste
  • 1 tablespoon butter
  • 2 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • 1 (14.5 oz. or 400g.) can diced tomatoes
  • 1 medium onion, chopped
  • Salt and pepper to taste

    In a skillet, melt butter over medium heat. Sauté garlic and onion until the onion becomes clear. Place sausage in skillet and cook evenly until brown. Crumble the sausage as it cooks.

    Stir oregano, tomato paste, and tomatoes into the skillet. Add 1/3 cup water to the mixture. Season the mixture with salt and pepper to taste. Stirring occasionally, reduce the heat to low and simmer the mixture for at least 1 hour.
