Cannoli
A tasty pastry dessert, cannoli comes from the Sicilian word cannolo, which is translated as “little tube”. The word cannolo stems from the Latin word canna, meaning “reed”. Cannoli originally came from Palermo in about the 1st century AD. The first cannoli was made with ricotta cheese, wine, and rosewater. Historically, cannoli was a treat served at the Carnevale, a season of festivities that happened before Lent. It was even thought as a symbol of fertility. Some believe that cannoli was first made in a harem in the city Caltanissetta. However, that is only a legend.
Cannoli cakes consist of pastry dough tubes with a filling inside. Canolli fillings can be made of a type of sweet cream. Usually, ricotta cheese is used as a filling in the cannoli shells. But mascarpone, cinnamon, chopped pistachios, succade, citrus peel, pumpkin, chocolate, raspberries, spinach, and cherries can also be fillings in cannoli recipes. Confectioner’s sugar and sprinkles can be put on top of the cannoli. The shell tube is made with sugar, butter, and wheat. After being wrapped around a dough ring, the oval-shaped shell is then fried. After being cooked, a pastry bag or a spoon can be used to fill the shells with the cream. Cannoli is best if it is served quickly after being prepared in order for it to not lose its crisp texture. If it is not immediately eaten, the cream and liquid will absorb into the dough shell and the cannoli will turn soggy. Italian cannoli is popular not only in Italy, but also in other European countries and in the United States.
